Loncheras: Una opción económica para empezar un restaurante que cuesta de $10,000 a $15,000.

En el bulevar Glenoaks y Sunland, en la ciudad de Sun Valley, California, Javier y Teresa Cabrera iniciaron su camino hacia el sueño americano en una troca lonchera, vendiendo tacos. Fue hace 11 años. Hoy, Daniel’s Tacos tiene dos locales, además de la lonchera original.

En todo el sur de California, la industria de los camiones de comida sigue generando empleos para cocineros que quieren independizarse.

Según la Asociación Nacional de Restaurantes, en 2012 esta industria registró ingresos de casi $700 millones, el 1 por ciento de las ventas de restaurantes.
